Recipe: Tis’ the Season for Chicken and Dumplings

SUMMARY: Chicken and Dumplings represent the pinnacle of comfort food, born out of necessity and a sparse pantry. Traditionally, a stewing hen, which was no longer laying eggs, would be used to create this hearty dish. Modern cooks can substitute with a store-bought rotisserie chicken or roasted chicken thighs. The dish involves simmering bones in stock, sautéing vegetables and sausage, and seasoning before adding cream and chicken meat. Dumplings made with biscuit mix are dropped into the simmering broth to cook. When made with care, this simple dish transcends its humble origins to become a soul-warming meal.

Spice of Life: How Hot Sauce is Part of the Culinary Identity of the Mississippi Gulf Coast

SUMMARY: Before moving to the Gulf Coast in 1992, hot sauce was not part of my diet. The Gulf Coast’s unique food culture, featuring po-boys and gumbo, introduced me to hot sauces, with Tabasco being the most popular. Created over 150 years ago on Avery Island by Edmund McIlhenny, Tabasco now comes in various flavors and is sold worldwide. However, my favorite is Mexico’s Valentina, made with puya chilis from Jalisco. It’s thicker, less vinegary, and has a strong chili flavor, available in hot and extra hot varieties. I love using Valentina on street tacos, eggs, grilled cheese, and more.
