SUMMARY: Before moving to the Gulf Coast in 1992, hot sauce was not part of my diet. The Gulf Coast’s unique food culture, featuring po-boys and gumbo, introduced me to hot sauces, with Tabasco being the most popular. Created over 150 years ago on Avery Island by Edmund McIlhenny, Tabasco now comes in various flavors and is sold worldwide. However, my favorite is Mexico’s Valentina, made with puya chilis from Jalisco. It’s thicker, less vinegary, and has a strong chili flavor, available in hot and extra hot varieties. I love using Valentina on street tacos, eggs, grilled cheese, and more.
