SUMMARY: At the Yeti Culinary Tent, chefs Tel Bristol Joseph and Jess Salazar from Emmer & Rye, Austin, showcased a demo featuring Johnny cakes. Originating from indigenous cultures, these savory cakes are a menu staple, praised for their flavor and adaptability. The batter incorporates all-purpose flour, buttermilk, dry yeast, and Texas chilies. Chef Jess prepared a fresh corn and sweet pepper relish, seasoned with Thai basil vinegar, to accompany the Johnny cakes. The chefs emphasized sustainability and seasonal ingredients, employing techniques like making fermented tomato powder from leftover tomatoes. The session concluded with a Q&A and a giveaway from Yeti.

Tavel Bristol-Joseph of restaurant Canje in Austin brought an elite pastry chef with him for his cooking demo on the YETI Culinary Stage at the 2024 Southern Smoke Festival.

The demonstrations in downtown Houston were hosted by chef, YouTube personality, and New York Times bestselling author Brad Leone.
