The Glory of a Southern Biscuit: Buttered, Spiced, and Smothered
SUMMARY: Hot biscuits fresh from the oven with good butter are a Southern breakfast favorite, especially paired with spicy sausage patties and fig preserves. Fig preserves can be rare but are worth stocking up on if found locally. Homemade biscuits are simple to make using flour, baking powder, sugar, salt, cold butter, and milk or buttermilk. Serve biscuits with quality butter and homemade jam, spicy sausage, eggs, and crispy bacon for a dream breakfast. Another classic is biscuits with sausage gravy, made with browned spicy sausage, sautéed onions, peppers, cream, and thickened sauce served over buttered biscuits.

Lighthouse Academy and Resurrection Catholic School Unite to Write ‘His Story’ with Mississippi Song Writers Alliance
SUMMARY: The Lighthouse Academy for Dyslexia, Resurrection Catholic School Choir, and Sean Gasaway of the Mississippi Songwriters Alliance (MSA) collaborated to create the inspirational song “His Story,” which highlights Jesus Christ’s impact. This project emerged from MSA’s Mississippi Music Arts Therapy (MMAT) program, promoting student growth through music therapy, songwriting, and creative expression. Lucretia Simpson, a dyslexia teacher, initiated songwriting workshops to help her students. The song’s chorus was developed at Lighthouse, then completed with the RCS choir under music teacher Vicki Bosarge. Funded by a Leo Seal grant, the song was recorded with 140 students and released May 2, 2025, supporting both schools financially, with all proceeds benefiting them.
